Let’s start with the basics — What is ghee and how is it made?

Ghee is clarified butter. All types of ghee started out as butter. The butter was heated to the point that milk solids began to separate; the whey and casein (milk sugars and proteins) were then removed resulting in golden clarified butter, or simply ghee. Although the process is the same for all ghee, the quality of the butter and the production practices will impact the final product. Here are some tips to help you weigh through all the ghee options.

What makes ghee quality

Grass-fed butter. 

It’s much cheaper to feed cows grain and soy than it is to let them pasture and graze on grass. However, cows’ bodies were built for grass eating and that’s apparent in the health of the cow and of course the products they give us. When cows are fed their natural diet, they produce milk (and ultimately butter) that contains higher concentrations of the fat-soluble vitamins A, D, E, and K, as well as conjugated linoleic acid (CLA), and omega-3 and omega-6 fatty acids.

Local ingredients.

It’s no secret that our food system, which is reliant on a fragile network that moves ingredients around the globe, is not very sustainable, on really any level. So when you choose to buy local, you choose to support a food system that is less reliant on fossil fuels and trade deals, and more supportive of local communities and economies.
