Ghee is clarified butter. All types of ghee started out as butter. The butter was heated to the point that milk solids began to separate; the whey and casein (milk sugars and proteins) were then removed resulting in golden clarified butter, or simply ghee. When cows are fed their natural diet, they produce milk (and ultimately butter) that contains higher concentrations of the fat-soluble vitamins A, D, E, and K, as well as conjugated linoleic acid (CLA), and omega-3 and omega-6 fatty acids.
